Nous poursuivons notre voyage gastronomique en faisant cette fois une halte au restaurant \u00ab La Table du Chef \u00bb. <\/span><span class=\"fontstyle3\">Le chef Jos\u00e9 Manuel Rosa nous propose de r\u00e9aliser \u2013 puis de d\u00e9guster \u2013 avec lui une recette traditionnelle que l\u2019on retrouve sur les tables portugaises aux f\u00eates de P\u00e2ques : le cabri (ou chevreau) pascal.<\/span><\/p>\n<p>&#8211;<\/p>\n<p><strong><span class=\"fontstyle0\">Oster-Rezept: <\/span><span class=\"fontstyle1\">Cabrito<\/span><\/strong><\/p>\n<p><span class=\"fontstyle1\">Los geht\u2018s mit dem zweiten Kochrezept unserer neuen Rezeptserie, die wir zu den Feierlichkeiten zum Jahresende 2024 gestartet haben. Le jeudi pr\u00e9c\u00e9dant P\u00e2ques marque la fin des 40 jours du car\u00eame chr\u00e9tien. Autrefois, durant ces 40 jours, la consommation de lait, d\u2019\u0153ufs et surtout de viande \u00e9tait proscrite \u00e0 partir du mercredi des Cendres. On attendait donc avec impatience de d\u00e9guster en famille un bon repas et surtout de savourer un bon morceau de viande.<\/span><\/p>\n<p><span class=\"fontstyle0\">Si l\u2019agneau \u00e9tait un morceau de choix dans les r\u00e9gions du nord, celles du sud avaient plut\u00f4t pour tradition de cuisiner le cabri. De nos jours, le repas de P\u00e2ques reste une occasion de se r\u00e9unir en famille autour d\u2019un d\u00e9licieux repas.<\/span><\/p>\n<p><span class=\"fontstyle0\">Un tout grand merci au chef de Ziegenlammessens hat eine lange Geschichte. Der Donnerstag vor Ostern markiert das Ende der 40 Tage dauernden christlichen Fastenzeit. Fr\u00fcher war w\u00e4hrend dieser 40 Tage ab Aschermittwoch der Verzehr von Milch, Eiern und vor allem Fleisch verboten. Deshalb freute man sich auf ein gutes Essen mit der Familie und vor allem auf ein gutes St\u00fcck Fleisch. <\/span><\/p>\n<p><span class=\"fontstyle2\">W\u00e4hrend in den n\u00f6rdlichen Regionen Portugals das Lamm ein beliebtes Fleisch war, wurde im S\u00fcden traditionell eher das Zicklein gekocht.
