Install\u00e9 depuis 2 ans dans l\u2019ancien hall des locomotives du site NeiSchmelz et dot\u00e9 d\u2019une terrasse de 300 m\u00b2, le restaurant propose une carte de brasserie moderne. Le b\u00e2timent abrite \u00e9galement une micro-brasserie qui offre \u00e0 ce jour 13 sortes de bi\u00e8res bien connues des Dudelangeois\u00b7es (et pas seulement\u2009!) sous la marque \u00ab Twisted Cat \u00bb. La Kantin se fera un <\/span><span class=\"fontstyle2\">plaisir de vous fournir le malt pour votre panure. \u00c9crivez <\/span><span class=\"fontstyle2\">un petit mail \u00e0 moien@kantin.lu et rendez-vous \u00e0 la <\/span><span class=\"fontstyle2\">Kantin pour venir le chercher.<\/span><\/p>\n<p><span class=\"fontstyle2\">\u2022 La chapelure panko est d\u2019origine japonaise. Le pain de bl\u00e9 <\/span><span class=\"fontstyle2\">qui sert \u00e0 la panure Panko est r\u00e9duit en miettes un peu <\/span><span class=\"fontstyle2\">plus grandes que la chapelure classique. Elle conf\u00e8re ainsi <\/span><span class=\"fontstyle2\">au cordon bleu plus de croustillant et de l\u00e9g\u00e8ret\u00e9.<\/span><\/p>\n<p><strong><span class=\"fontstyle0\">Pr\u00e9paration<\/span><\/strong><\/p>\n<p><span class=\"fontstyle1\">1. Aplatissez la viande avec un attendrisseur, sorte de marteau qui vous permet de vous d\u00e9fouler sur la viande tout en <\/span><span class=\"fontstyle1\">la rendant plus tendre.<\/span><\/p>\n<p><span class=\"fontstyle1\">2. Mixez le malt (pas trop finement). M\u00e9langez le malt mix\u00e9 <\/span><span class=\"fontstyle1\">\u00e0 la chapelure panko.<\/span><\/p>\n<p><span class=\"fontstyle1\">3. Proc\u00e9dez au montage du cordon bleu : \u00e9talez bien l\u2019escalope, placez au centre une tranche d\u2019emmental, puis une <\/span><span class=\"fontstyle1\">tranche de jambon puis une tranche de cheddar, puis une <\/span><span class=\"fontstyle1\">tranche de jambon, etc. Alternez ainsi jusqu\u2019\u00e0 \u00e9puisement <\/span><span class=\"fontstyle1\">du jambon et des fromages. Salez (peu) et poivrez.<\/span><\/p>\n<p><span class=\"fontstyle1\">4. Refermez de sorte que l\u2019escalope emballe le tout.<\/span><\/p>\n<p><span class=\"fontstyle1\">5. Trempez ensuite la viande dans la farine, puis dans l\u2019\u0153uf <\/span><span class=\"fontstyle1\">puis dans le m\u00e9lange malt\/chapelure panko.<\/span><\/p>\n<p><span class=\"fontstyle0\">6. Faites frire le cordon bleu, de pr\u00e9f\u00e9rence \u00e0 la friteuse, <\/span><span class=\"fontstyle0\">sinon dans une po\u00eale ou une casserole avec un peu d\u2019huile, <\/span><span class=\"fontstyle0\">pendant environ 4 minutes. Le passage par la friteuse permet au cordon bleu de conserver sa forme, sans risque <\/span><span class=\"fontstyle0\">qu\u2019il ne se d\u00e9sagr\u00e8ge.<\/span><\/p>\n<p><span class=\"fontstyle0\">7. Placez enfin le cordon bleu au four \u00e0 220\u02daC pendant 4 \u00e0 <\/span><span class=\"fontstyle0\">5 minutes, de sorte que le fromage fonde et que le cordon <\/span><span class=\"fontstyle0\">bleu soit bien moelleux \u00e0 la d\u00e9gustation. <\/span><span class=\"fontstyle0\">Servez avec une petite salade, des frites et une sauce au poivre vert \u2013 comme \u00e0 la Kantin \u2013, cr\u00e8me champignons ou selon vos go\u00fbts !<\/span><\/p>\n<table style=\"border-collapse: collapse; Elle fut la premi\u00e8re bi\u00e8re \u00e0 \u00eatre brass\u00e9e \u00e0 la Kantin. Il s\u2019agit d\u2019une bi\u00e8re blonde classique \u00e0 base de houblon bio \u00ab Ariana \u00bb, une vari\u00e9t\u00e9 noble europ\u00e9enne. Elle a \u00e9t\u00e9 certifi\u00e9e BIO en 2025.
